I’d like to say that Guy is MY friend, but he’s really my parent’s friend. Guy has come over to my house to hang a chandelier in a precarious location, handled a shower door with ease, and I’ve only ever offered margaritas in return. Guy has done so much for me and my family… including sharing this DELECTABLE, densely flavored pound cake that is almost too simple to create. It makes the perfect gift, housewarming offering or even a breakfast pairing to your beloved coffee. When Guy gave me the go-ahead to share his secret recipe, I was so excited… I had to do it justice!
Using a handful of pantry staples, this pound cake comes together easily with a hand mixer, though using a stand mixer is awfully handy when slowly blending each ingredient.
The heavy dash of vanilla is the last to top off the “wet” ingredients… it’s really easy to follow the recipe and yield a super buttery batter.
Take extra care to mix the flour in slowly. This is truly a recipe that needs to be blended 1/4 cup at a time, integrating each dash of flour. It almost seems like it’s too much for the wet batter to handle, but when it’s all incorporated, you’ll be delighted with the heavy consistency… just don’t eat the raw batter!
Stoneware pans are my favorite baking tool for breads, but (affiliate) non-stick air bake metal pans like these from Farberware are inexpensive and yield great results.
Pair your finished bread with butter, marmalade or jam and serve with your favorite breakfast drink. I can attest that it matches coffee perfectly, or the orange juice that my husband swears by. Guy's Pound Cake
Ingredients
- 1 1/2 cup All-purpose flour
- 4 oz Cream cheese
- 1 1/2 cup Granulated sugar, organic
- 1/4 tsp Salt
- 1 tsp Vanilla extract
- 3 Eggs
- 3/4 cup Butter
Instructions
- Preheat the oven to 350 degrees.
- Grease bread pans.
- Combine cream cheese, butter, sugar, salt, vanilla, and eggs in the large bowl of a stand mixer. Mix well on low speed.
- Add the flour to the bowl, 1/4 cup at a time. Continue to add the flour until it's well combined.
- Pour into the bread pans.
- Bake at 350 degrees for about 45-55 minutes, or until a toothpick comes out clean.
- Allow to cool for ten minutes before slicing and sharing. (Or, maybe no sharing.....)
